In La Alberca since 1956 Fermín has been manufacturing the best traditional sausage and pork products that La Albarca has to offer since 1956. Our products are made in the heart of the Sierra of France area, at an altitude of almost 4.000 feet, giving our products their unique character and quality. They are incomparable.
The Iberico pig, the popular ‘Pata Negra’ (black hoof) is a direct descendent of the wild boars that that used to inhabit the entire Mediterranean basin many years ago. In fact, stone sculptures of these pigs have been found that date from before the Roman Empire. In general, these animals weight between 330 to 440 lbs. They have long, slender extremities, dark hair, and the lower part of the legs and hoofs are practically black. They have an elongated slim snout and a highly prominent jowl.
What truly makes these animals unique in the world is its unique ability to store healthy fat, creating a marbling effect on the meat. This is a cardio-healthy food product that contributes to lowering the rate harmful LDL cholesterol.
FERMÍN has its own farm, ‘Los Helechales’. Keeping with our company’s tradition, it became the first in selection of pure Iberico pigs in a land of such deep-rooted traditions of pork products such as ours.
Fermín has become a clear standard of reference of Spain’s Iberico products. In 2005, after USDA approval of our processing and packing plants, we became the very first Spanish company to gain USDA approval to bring Iberico ham to the United States.
We are now resent in more than 20 nations. Apart from being first in the US, we were also first to export Iberico products to Japan (1999), Canada (2007) and Singapore (2008).
Fermín is the most awarded Spanish company in the US. Effort and has enabled Fermín to mark another milestone by getting many prizes, among them, several FABI Awards and SOFI Gold Awards, considered the Oscars of the Gastronomy world.
